We started the Night Kitchen in the hot summer of 1999 in a hole in the wall on a shoestring budget with some crazy ideas about pizza. We aimed to create a thin crust pizza that was both delicious and that utilized real local and exotic toppings with an emphasis on flavour and quality ingredients. This thinking was in direct opposition to the pizza ideals of the day where quantity and cheapness were seemingly the main goals.
Sixteen years in and we now call Hunter street our home. We got rid of the potato gun and some rickety countertops for some serious wood. Our partnership with local farmers is ever expanding! Long cone and El Cid peck away at the compost and the music in the shop remains eclectic, bizarre and ever changing!
The copper edition, our mobile pizza oven C’est Chaud, fires out wood fired pizza for weddings, festivals, markets, schools…
